Usually catch 3 - 4 annually. Never would try in a kayak though. A legal one will take you for a long ride ~ time and distance. Never allow a hooked one near a yak. When we have a keeper I make sure he is tired and not green before the gaff comes out. When gaffed he goes straight into the box, never out of the box until cold!! I have seen guys get hurt and boats damaged by these strong fish. They are tasty though. They are caught sat times bottom fishing near structure. They can often be seen following the boat or a turtle. I always have a spinning rod ready for them. Sometimes they will not bite anything, other times a jig, live bait, or about anything they will hit. If you want big ~~ try king mackerel, it will be safer.
